Yes: moderate to severe oral allergy syndrome can result in some oral swelling.  severe cases can even cause anaphylaxis.  it is always important to understand the combination of environmental and food sensitivities contributing to the symptoms and to find out if carrying epinephrine is advisable.

Dr. can check throat: New throat pain can be from a strep throat infection (antibiotics are needed), a cold or influenza (antibiotics usually not used), or from some other cause such as allergies or irritants. Usually, a person sees the doctor if the sore throat is bothersome, recurrent, or doesn't go away quickly (mainly to check for strep throat). Throat lozenges and Tylenol (acetaminophen) or Motrin can help decrease throat pain.

Orofacial pain doc: If the dentist has not found a dental cause for the pain, see a TMJ-orofacial pain specialist. Any dentist can be a TMJ orofacial expert with the proper training and experience. Most commonly, oral surgeons, prosthodontists, and orofacial pain specialists. Ask your MD, your dentist and your dental society for referrals.

Unlikely: Oral allergy syndrome per se is highly unlikely to cause any throat closure.  However avoidance of the offending food or fruit is still the best treatment.

Diagnosis: Clearly, without seeing you it is impossible to arrive at an accurate diagnosis.  It sounds as if you have a viral infection, possibly due to a coxsackie virus causing herpangina, and the vomiting and diarrhea, either part of the viral infection or a reaction (several possible) to the antibiotic.  Ask the doctor whether they tested for strep and the results.  If negative, stop amoxicillin.
