In adults it is usually 60-90, lower for those who exercise very regularly.  Above 100 in an adult can be normal with exercise but if it is above 120 at rest it could be a sign of an abnormal rhythm that can be checked by you doctor.

Fats on/in meat, lard, bacon grease, also palm, coconut ; olive oil (if high quality). If concentrated from plant sources or processed/hydrogenated (even without trans-fats: only cis-fats) then highly questionable: ie paleo principles ; consistent with all actual science.

the basic answer though is yes. There may be no individuals with that particular disease at a given time (prevalence). If you contract that disease, and are the only one, you have established an incidence rate.
