If : If you have mononucleosus and sore throat and rash please see your physician to make sure you don't also have strep throat.  They often happen at the same time.  
In general though, itchy rashes like you describe can feel better with cool (not hot) baths or showers and taking over the counter benadryl (diphenhydramine).  Avoid wearing itchy sweaters too.

Mono: mono doesn't usually flare up. Mono can come with complications including chronic fatigue and muscle aches. Try to make sure to drink a lot of water, do excercise to keep your body strong and eat healthy

Med for mono???: If you take ampicillin or amoxicillin for strep while you have mono, you will get a rash all over. So you treat the strep with Penicillin VK, not ampicillin. You may also have a rash as part of mono. After mono is gone, you can take amoxicillin without a rash. I am glad the rash is clearing, so you may not need to do anything. Many causes: Depends on a lot of factors, including whether you took antibiotics.

Mono itself can cause a sandpapery rash. Also being treated with Amoxicillin when you have mono commonly leads to a rash.

Strep can lead to rashes directly (e.g. guttate psoriasis), or later on via scarlet fever (which isn't common in adults in the US).

Also any time you get a fever, it's possible to get heat rash.

A week or more: I've seen cases where the rash faded in about a week & some that were faintly visible for a bit longer. As long as any residual Amoxicillin is still being absorbed in the GI tract it can stimulate rash production after you stop the med.That is usually finished in a day or so after stopping.

Quit taking it: This med has no value in treating mono, so it can be stopped. If you were to need an antibiotic for another reason, the doc could select an alternative.
