Proof is in numbers: COPD is diagnosed by a fixed obstructive ratio fev1/fvc of &lt; .70.  Above that no COPD and below it is copd. Severity of obstruction is assessed by your fev1 in comparison to other men of same age, height, weight, and ethnicity. Most with COPD with fev1&lt; 50% may have disability. Without knowing your pfts, it would be hard to answer your question more specifically.

COPD causes : COPD is caused by long term exposure of the lungs to irritants and inflammation. Usually the irritant is tobacco smoke, but there can be other environmental irritants. Rarely, some have a genetic alpha-1 antitrypsin deficiency, a protein the protects the lungs among other organs. Also asthma, as a chronic inflammatory disorder, can lead to COPD in very uncommon cases.

Not per se: COPD may cause an elevation of hemoglobin level but should alter the red cell indices. How low is the MCH? Having the actual value would have helped. An isolated laboratory result is insufficient to provide a meaningful opinion.

Yes: Not being able to breathe is one of those things that can lead to panic. It becomes hard to tell which is the worse problem. So you could have fairly mild COPD but making you feel short of breath out of proportion to the lung problem. Then again, if the lung problem is severe, panic could make the symptoms even worse.
