Celiac disease: Depending on how much your gut is affected and how long you have it, symptoms vary. This is the disease of gluten sensitivity, a wheat protein. The gut membrane is thin out, can't absorpt nutrients, and makes you have diarrhea, bloating and belly pain. When you can't absorpt your food, you'll be thin, weak, fatigue, has mouth sore due to nutrient deficiency.. And get irritated by all of those.

Not sure...: ...that your question makes sense.  We all die from something and some even die in "perfect health." It is very unlikely that one has a serious illness without serious signs and symptoms.  I can think of a few exceptions to this rule such as critical stenosis of an artery supplying the heart or brain, but even they frequently provide some warning.

Go for it: Ask her. Most skin diseases are not catching. If you care for her, ask what is going on with her skin and whether SHE thinks is a problem for the relationship. Reassure her. Tell her you think the skin stuff is fine because you like her. Talk openly about this and any other concerns. Make it clear that the skin disease is not a problem for you. This is what any decent lover does.
