i get blurry vision after eating starch sugar or carbs. and my blood glucose will be between 111 and 128 using my handheld glucose meter. why such strong fatigue if thats normal ranges? sugar and carbs make me feel strange yet glucose under 130 why?

15  minutes after eating breakfast my blood sugar was 152. however it tapered off quickly and was back under 100 after one hour. is this normal?

Yes: While it is not a  standardized test the data your provided is no cause for concern.
For good health - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Drink enough water daily, so that your urine is mostly colorless. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form. 
Practice safe sex, if you have sex.

Yes, but: There are no normals for one hour after a meal, only for fasting and two hours after eating. If it's a finger stick glucose, your real blood sugar was probably higher than the value you got.

Yes, but: If you was to test your blood glucose status, it should be tested after an 8 hour fast and done at laboratory with plasma testing. What you described is not a cause for concern.

Insulin secretion: Our bodies anticipate and secrete things as needed, in addition to basal rates.  A prandial secretion of Insulin easily explains why your blood sugar falls to 79 after eating; if you have no symptoms, i wouldn't worry about it unless you are taking diabetic medications that would artificially affect Insulin levels.
