Well: If you are using slim fast and were not over weight, if you are all muscle and do not have enough body fat it will inhibit ovulation .  You don't give much information about your height, weight and exercise but it is not a direct side effect of slim fast.

Shouldn't matter: At least not much. 'scoring' mucus is very inexact. If you have trouble getting pregnant it's probably for another reason; a doctor knowledgeable about fertility can help.

Vaginal  protection: Clear non odorous vaginal mucous is secreted by the epithelium(lining) under the influence of estrogen to protect it from infections and provide lubrication for sexual activity. It doesn't have to be at ovulation, it can be secreted spontaneously if your thoughts are sexual in nature.
