Anovulation?: If your doctor has started you on metformin, my assumption is that you are either not ovulating, have Insulin resistance or both.
Its a hard question and one that can only be answered accurately if you are in fact regular. Otherwise, we are at the mercy of  of ovulatory kits. If you have a positive surge with an OPK than you should have intercourse the following 2 days after a positive test.

Daily: Some couples get pregnant after one episode of sex. We call them lucky, if they are married, settled down, and wanting to have kids. The majority of couples may not be so lucky, but they can try having sex once or twice a day from about 3 days before expected ovulation, to a couple of days after expected ovulation. (Nobody knows exactly when she will ovulate.)

Timing is everything: It only takes once at the right time- the optimal times being 3-4 days before ovulation until the day of ovulation. It is best if the man avoids ejaculating for a week or so before this time to accumulate more sperm. But it's ok to practice at other times!

: For sure not daily, once in a while is okay if your wife also enjoys it because frequent anal sex may cause deleterious health effect to your wife.

Not relevant...: It is not relevant; you may intercourse or ejaculate whenever or however you can tolerate and perform. But remember: Sex arousal - ejaculation will increase circulation through it and cause vigorous muscle contraction. Being "too" often in such may exaggerate the already existing urinary symptoms. So, let your body tell its own story and respect it, and take actions to adapt accordingly. Best wish

Pre-ovulation: The lh surge  detection kits determine approximately 24 to 48 hours before ovulation. This is the time when intercourse should occur.

Probably not: But the only way to tell is with a pregnancy test.  If you do not wish to have babies now, then use contraception.  It is available everywhere.  Good luck.

Hymenotomy: Your doctor can perform a hymenotomy to relax the hymenal ring and decrease your symptoms.  This can be done in the clinic with a local anesthtic but is most often done in an operating room under adequate general anesthesia.
