Brady/tachy: Several medications, drugs, such as caffeine, nicotine, cocaine, etc. all have the potential to cause heart rate issues.   Some people can get irregular rhythms form stress.  You should get your hear rate issues assessed and a Holter monitor may be helpful in diagnosing what your underlying issue is. Best wishes.

Probably: Yes and probably skips and vice versa your heart rate rise when you stand up fast.

Could be, : If it happens infrequently. You have have been a bit dehydrated... If it occurs more than once a week and repeats itself, let you doctor know... Best luck!

Normal: This is a normal physiologic response as the blood tends to move toward your feet when you stand up.  Your heart compensates by increasing the strength of the contraction and/or increasing the heart rate.  If it is uncomfortable or you experience lightheadedness it may indicate that you are a little dehydrated.

Reflexes: There are chemoreceptors and baroreceptors in the neck which control heart rate. Heart rate control is mediated by the vagus nerve  and by circulating catecholamines secreted by the adrenal gland.

Depends: Slow hr could be due to physical conditioning and indicative of good health or it could be pathologic. Fast heart rate almost always indicate some underlying issue and suggest either deconditiionibg, dehydration, anemia, pain to name a few.

: This is called anxiety. There are real changes in chemicals/hormones/neurotransmitters that occur in these situations.  These changes can absolutely lead to the symptoms you describe.  There are many ways to overcome these physiologic changes, such as deep breathing, meditation 🧘‍♀️,  even medications 💊can be used if severe enough. Talk to your doctor about referral to behavioral psychologist.

May be normal: It is normal for hr to slow  down during sleep. Also normal for hr to varry between inspiration (faster hr) and expiration (slower hr), this is called sinus arrhythmia and is perfectly normal. This may be what you are  hearing. If worried, however, best to check with the pediatrician. But, why are you listening to your 21m old's hr?If it is a healthy kid then no need to check the hr during sleep.

Normal response: Not sure where you got that information. As we expend energy in any form we require increased blood flow, to in this case the chest wall muscles and diaphragm, to keep them fed and oxygenated. One of the ways our body does this is by increasing the heart rate just like it does if you start running or perform any other activity, even digesting food expends energy.
