It depends: It depends upon what you mean by "hashimoto's thyroiditis".  Hypothyroid symptoms should clear up within 6-8 weeks of treatment with a dose that makes the TSH normal.  Inflammatory symptoms (pain & swelling in the thyroid), get better in in most cases within a few months, but can persist for years in other cases.

No: Gluten free helps only those who are sensitive to gluten and has no health benefits (potentially nutritional issue) otherwise. I hope you are under the care of an endocrinologist since thyroiditis is usually controllable.

Even with mild disease in children the treatment can have profound benefits.

: Hashimoto is an autoimmune disease which is different from a viral infection. So these conditions may occur at the same time quite rate, I think. This is not different from a person with autoimmune hepatitis can still be infected with viral hepatitis A, B or C.
