When the protein loss is significant fluid retention(edema) is present.

Many: Some people use ms. Dash, or lemon, citric acid, flavored vinegars or other household spices - ginger, pepper, cumin etc. To keep their food lively.  Potassium chloride is available at most supermarkets as well and tastes pretty close.  It is often marketed as a salt substitute.  Excess potassium would not be good if you had advanced kidney disease though.

Hormones, salt: Hormones affect fluid retention. In the week before menses many women get fluid retention. Salt intake can also affect how much fluid your body retains. Other more obscure causes are related to serious diseases such as heart failure, nephrotic syndrome(kidney disease), severe malnutrition , peripheral vascular disease. If one leg is swollen, i would worry about a blood clot.
