No and no: Ensure products have no estrogen, but do contain soy, which has been thought to have estrogen-like effects in men. But, per livestrong.Com, "no research has shown that soy isoflavones can produce effects similar to pathologically high estrogen in men. A 2011 analysis of clinical data in the journal "fertility & sterility" found no effects of soy products or isoflavones on male sex hormones in men.

It may but not used: While it may help block growth of the breast cancers in women, it is generally  not considered first line therapy for gynecomastia and is not indicated for this purpose. However, i recently had a patient whose endocrinologist prescribed this as an off label indication. You should first  be fully evaluated by an endocrinologist.

Gynecomastia: Yes. With the administration of clomiphene, an antiestrogen, approximately 50% of patients achieve partial reduction in breast size, and approximately 20% of patients note complete resolution. 
Tamoxifen, an estrogen antagonist, is effective for recent-onset and tender gynecomastia. Up to 80% of patients report partial to complete resolution. Another drug is danazol.

Gynecomastia: Generally, no treatment is required . Pubertal gynecomastia resolves spontaneously within several weeks to 3 years in approximately 90% of patients. For patients with idiopathic gynecomastia or with residual gynecomastia after treatment of the primary cause, medical (antiestrogens ) or surgical treatment may be considered.

Balancing estrogen?: Maybe. There's no good studies ; little theory; it's targeted for bodybuilders abusing steroids. You're an adult now. You're also taking prednisone, which i must suppose is prescribed by a physician for something really serious. Your life is too difficult already for you to be called "the guy with the __s".  You owe it to yourself to have definitive treatment, which is office surgery.
