Mouth Breathing : People who mouth breath  at night when the air is cold and less humid often dehydrate their mouth and throat  to the point of  wakeing up and coughing.  Also breathing cold air is irritating to the mucosa in the back of your throat. When you breath through your nose,  the air is warmed  before it hits your throat.   If you can't clear your nasal passages, try sleeping with a surgical mask.

Sounds URGENT: Gaspiing for air is an emergency. You may be having an asthma attack, have an acute infection/pneumonia, a lung blood clot/pulmonary embolism, or one of many other things all of which can be very serious. Go to an emergency room NOW. Good wishes:)

Opposite: Warm and moist air.  Stay in if sick.  Try a humidifier.  Sips of water.  Cough meds not certain to really help.  Nose breath.  Cover mouth while outdoors

: Have you tried mask? It should work if the allergen is dust. If needed, you can take this anti-allergic medication in a long time if you think it is effective and avoidance is impossible. Patient who has mastocytosis uses antihistamine medication for years.

Allergies: You are describing what sounds like allergies with post-nasal drip. You could try a non-drowsy antihistamine such as fexofenadine or loratadine, and/or a cortisone nasal spray such as fluticasone or triamcinolone. These will reduce your itchiness, and reduce your cough if cause by PND. See your doctor to make sure you don't have asthma.

Virus vs allergy/PND: Your symptoms are most likely from a virus which can cause coughing especially in night time cool air. If this is a chronic condition it can sometimes be due to allergies or postnasal drip but less common. 
Drink plenty of fluids, try zinc lozenges at outset of discomfort in throat/virus starting. Get plenty of rest. See MD if fever develops or severe sore throat.

Acid reflux?: Sounds like a variety of heartburn. You can try Prevacid (lansoprazole) over the counter for a week or two. If worse or not resolved would go ahead and see doctor. Sometimes alcohol, anti-inflammatory medicines, spicy/acidic food, or stress can cause, sometimes other causes, so get checked if it doesn't go away.

Sore throat: This could be infection (viral vs. Strep most likely), allergy, dryness from mouth breathing, and a few other things. If nothing else is going on you might want to have it tested for Strep at you local immediate care center or PCPs office. Hope it clears up soon
