This is based on genetics.Poor nutrition in general, chronic disease, premature onset of puberty and other such factors can keep someone from reaching their expected genetic height. Blaming the issue on coffee intake is a bit of a stretch.

Caffeine is structurally related to the body's own stimulants that are produced by the adrenal gland - norepinephrine and epinephrine - and may also increase the production of cortisol by the adrenal as well, further potentiating the "flight or fight" response. Short-term more energy, long-term perhaps more fatiguability.

A suggestion: Do an ekg at the time that this happens. Also do a spirometry and pulse oximetry. Make sure these tests are performed when you are short of breath. Most internists can do them in their office.

Primary stabbing HA?: These type of HA may be often associated to migraine. The brain (the left hemisphere), does not really hurt. Is it the left side of your head that hurts?  See a doctor, have him check your blood pressure and give you a thorough physical and neurological exam.

Taste and spit: I trust that you do not drink 30 cups of coffee, just taste the coffee from 30 different cups. Taking up to 4 cups of coffee/day will not do harm and may be good for you.
It is good that you exercise.
For good health - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Drink enough water daily, so that your urine is mostly colorless. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form. 
Practice safe sex, if you have sex.
