Whiplash: Whiplash has a strong tendence to be a chronic problem. The best way to avoid this is with vigorous and repeated physical therapy or neck exercises with heat. If you get the neck muscles really stretched out and loose (e.g., by stretching exercises, ear-to-shoulder, head rotation each side, and touching chin to chest--several times a day with moist heat or in a shower, you can heal this quicker.

my neck makes a "crunch" sound whenever i tilt my head to the side. sometimes my neck makes a popping sound with every footstep. why? i'm only 17.

Crepitus : That is called crepitus. It is a similar thing that happens when you pop your knuckles.

Pinched nerve: seems very likely.  Try not to move your neck in ways that bring this on, and see your GP if it gets worse.

More likely muscle: Typically the sound is muscle sliding over a joint.  It can pinch a nerve but more often catches tendon part.  Can cause inflammation  and over the counter anti-inflammatory can help (ibuprofen, naproxen, etc) can help.  If doesn't improve or have numbness or cold arm/hand seek medical attention.

i'm not actually sure if i have a throat lump but when i push on the right and left side of my throat it makes like a crunching sound. it almost feels like it's cracking or something. like cartilege rubbing together? i don't know.

Can be injured: A disc can be injured with a severe whiplash. More often its just a muscular soft tissue injury. Physical therapy with exercises!

Probably not: You have probably sustained a muscle strain as opposed to a true "whiplash" injury.  Whiplash is a term for soft tissue, ligament, muscle, and joint injury from a rapid acceleration or deceleration action.  Whiplash can include muscle strains, but the injury you describe is quite low energy, and therefor a simple muscle strain is most likely.
