Celery is usually kept in the refrigerator drawer to preserve its character.  Celery however, has little nutritional value.  Jokingly it is said that eating a stalk of celery is minus 3 calories due to the energy consumed in chewing it. It has no vitamins, minerals or other nutrients.

Fibrous: Celery is very fibrous; break a stalk in half and you will see "strings".  It is those string that may be causing the gagging.  If you still want to eat celery I suggest taking smaller bites and chewing more vigorously.
