Depends: It would depend on the organism or chemical involved that may cause food poisoning. From what you described, you are unlikely to get food poisoning.
Wish you good health! - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Drink enough water daily, so that your urine is mostly colorless. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form. 
Practice safe sex, if you have sex.

No: Food poisoning requires ingestion of the bacteria into your mouth and stomach.  The odor may cause nausea but should not cause an actual illness.

Just let it happen.: Just let whatever happens happens.  You're not going to feel well for maybe a couple more days, but don't make yourself vomit as (a) it won't help and (b) you can give yourself a tear in your esophagus, which of course would not be good.

Bad gas: Flatuence (gas) can be a common symptom after a gastrointestinal infection. This can last several days after other symptoms resolve. If you need to try something to help relieve your symptoms, there are many gas relief medicines over the counter. Gas-x or beano are a couple.

: If you do not get any symptoms in a day, you would be in the clear. It is not feasible to say that you will not get food poisoning without knowing the state of the dip, before you put it in the fridge.
