No evidence that: diet has any affect on appendicitis, and only indirect evidence that eating seeds causes diverticulitis.

Chest pain: It is very unlikely that sunflower seeds are responsible for chest pain but you should certainly stop taking them'

Anyone with chest pain every night needs to see a doctor as soon as possible. If there is a long wait time please go the the local Emergency Room.

Aspiration : Highly unlikely to cause major injury. Should clear with cough. If symptoms persist beyond a few days,  get a chest xray  at your doctor.

Some people use: Sunflower seeds as a way to avoid constipation. There was one case of a sunflower bezoar causing a fecal impaction (weird !).

Unknown: Appendicitis can occur from infancy into the very elderly. I am not aware of any causes for appendicitis.  One medical site lists the most common age group for appendicitis is ages 10-30.
