i've been very stressed and not eating much i'm 5.8 and weigh 110 pounds. should i be worried about my organs shutting down?

Not likely.: The body is pretty smart.  At your age you really have to work hard to make it fail.  Organs don't just "shut down." they adapt and work hard to prevent failure.  The kidney is often the most sensitive organ.   As long as you make about 1.5 l of urine per day they will do fine.

i lost a lot of weight rapidly last year due to grief and stress/not eating. i'm half the size i used to be, how can i start to gain weight healthily?

Weight loss: Just eating a balanced diet will put the weight back on -   Basically eating calories above what you are burning off will cause weight gain.   Protein shakes and supplements for body builders will work.

is it common to lose up to 3lbs in 1 day due to not eating for the day due to stress?  a couple of weeks i lost up to 7lbs due to a 3 stress, i gained it back the next week. is this normal? blood normal

Wt loss: This is absolutely normal but I would suggest that you try to reduce your stress level

first have a good long cry in the shower, it works wonders.  Crying releases our bodies natural endorphins--pain killers, mood enhancers whenever you feel a discomfort in lower throat-have a nice cry.You'll feel better. Food--light, happy foods like fruit, yogurt, brown rice, soup are good. Grieving is a natural process. You'll feel a bit better each day.If not, get counseling.

Could be: You need to have a check up and labs done to make sure everything else is fine.This is a significant amount of weight loss and it could be due to stress and anxiety but other medical conditions need to be ruled out too.

It's time to take: Care of yourself. Aim for daily exercise, 8 hours of sleep per night & good nutrition with 5 servings of veggies & 4 of fruit per day. Try tai chi, yoga, qi gong, progressive muscle relaxation, deep breathing exercises & meditation.  Don't isolate - spend time with friends and stay active. Supportive counseling might also be beneficial. Take care.
