Fatalities from viral gastroenteritis are more likely to occur in those at the extremes of age or the immunocompromised.

Start slow: It's best to give your GI tract a rest in the beginning.  Focus on hydration. When you do eat, start with clear liquids and then advance gradually if tolerated.  Good things to eat included bananas, toast, rice, broth, and apples.  Avoid caffeine, alcohol, milk products, acidic food, and fatty food.  Stay off milk products until you've been better for 1-2 weeks.

It can: Gastroenteritis is the number one cause of death world wide.  In developed countries it is very rare to die from this, especially if you have access to medical care.  I personally have one patient who did die from gastro when they refused to come back for re-eval as recommended.

: That is a very high number for acute gastroenteritis but it is still possible. The differential dx between acute gastroenteritis and acute pancreatitis may be hard when the symptoms of lower GI tract has not occurred yet. However, when you have diarrhea subsequently, acute gastroenteritis is more likely. Practically, CT of the abdomen is often done when lipase is that high to rule out pancreatitis
