Bacteria: You are not likely to get any parasites from eating us grown beef.  You may acquire bacterial infections, e.g., toxigenic e. Coli, salmonella etc.

Nearly zero: Tapeworm infection can be caused by eating raw or undercooked meat of infected animals, pork more common than beef. Usually there are no symptoms, perhaps a little abdominal discomfort; people see worms in stool!  In the US, laws on feeding practices and the inspection of domestic food animal have largely eliminated tapeworms. Cook whole cut meat/steak to 145 and ground meat to 160. Stay well:)

: If you wish there are blood and skin tests that correlate with food allergies. These are helpful with some. Your reaction could also be to the material/seasonings used in cooking, which would make the issue more difficult to sort out. The simple approach= if it makes you sick don't eat it.

Sometime people react to beef because of what the cow was given (like the grains it was fed or the hormones and antibiotics it was given).   If it is an allergy or sensitivity, there are some tests that your doctor can do to get more information.

Most likely OK: Consuming undercooked chicken not necessary will make you sick..Unless the checkened is contaminated. Even with some contamination, the stomach acid can generally handle that for you. If the contaminated with salmonella, staph aureus, or other nasty bugs, you may know as soon as 1-2 hours or up to 2 days later. After 2 days, likely ok.

Adverse rx: You have an obvious adverse rx to beef or pork.  Possibly even an allergy.  You should avoid these foods if they irritate you so.

Food poisoning: Nausea, vomiting and diarrhea are the hallmarks of simple food poisoning and it usually resolves without specific treatment except light diet, adequate fluid intake, flat ginger ale to relieve nausea and kaopectate (kaolin and pectin) to relieve diarrhea. More serious cases show severe and worsening symptoms, require stool cultures for diagnosis and often antibiotics are needed(for shigella, salmonella for example)
