Fad diets dangerous: This fad diet is not safe or effective and i would advise you to stop the insanity. This is one more fad diets that looks 'clinical'
but is designed to make some people rich and to keep it's clients obese.

That much caffeine is well known to cause diarrhea and other GI upset.

Unknown, uncertain: Velvet bean extract is in some products (in uncertain amounts), but since they are not medications approved by the fda, the products are probably not tested for interactions with medications such as parkinson's meds. So, that means nobody really knows what effects or interactions there are. If an velvet bean "product" user thinks he is getting an interaction, he can visit his primary care doctor.

Not true: That is not true at all. It's an excellent source of protein and you don't have to eat meat. My guess is that may come from the meat industry.  Also, try to find non-genetically-modified soy.

Yes: It is good but the problem with a lot of indian cooking (including dals) is that a lot of oil is used and one of the worst things possible - ghee.  Don't ever use ghee - it is nothing but purified fat.  And cut down on the oil or use low-fat oils.  Using ghee and high-fat oils will raise your triglycerides no matter how much mung beans or other dals you eat.

No: There is no worry about B vitamins "building up." The only B vitamin that our body stores is B12 and it is non-toxic. The only B vitamin known to be toxic is B6 but one usually has to take over 200 mg/day; it is impossible to get anywhere near that via diet.
Zinc toxicity is not known unless one ingests at least 100 mg/day long-term. Diet levels never approach this. 
So no need to worry.
