my mouth is sore since yesterday, worse today. especially the tip of my tongue, my gums are very sensitive too, and i tasted saltiness. not burned.

Mouth sore: It's not uncommon for your mouth and/or tip of tongue to be sensitive after a bout of hot, salty, or spicy foods. This is related to surface damage and should resolve within a few days. If not please see your primary care physician.

Not likely.: Gallstones typically cause post prandial pain.  Changes in taste is probably related more to respiratory problems, such as sinusitis.

Yes: Avoid spicy foods, really hot foods, alcohol and smoking...Anything that can cause irritation for several days.
If the condition does not improve, see your dentist or an oral surgeon for an examination.

Acclimatization: is more likely, not damage.  When people from countries where spices are heavily used move to countries where they are not, they often experience shock when they visit home and are exposed again to spices.  Your taste buds "turn over" all the time.  So not to worry if one layer is damaged anyway.

Some medications: can alter sense of taste and some may actually cause a bad taste in the mouth. Take care.

Anything is: Possible, although unlikely. If you have hypothyroidism and don't take your replacement, nothing in your body will function properly. It's so simple to take the medication and be healthy; why not do it properly?

No set answer: This is very individual. However, foods with complex smells seem to invoke more nausea. Another trick is if your food is covered with a lid or has just been micro-waved...Have someone else open the lid and let it air lout in another room before bringing it in to you. Removing the lid and getting hit with a concentrated dose of the aroma seems to cause more nausea than anything.

Simple to complex: May be something as simple as B12 deficiency to something as serious as brain tumor. Seek evaluation

Regurgitation: This could be due to a number of reasons. Likely cause however is some sort of regurgitation due to esophgeal problems. You may need to discuss with a good gastroenterologist.
