"Enormous"?: I'm not sure what you mean by "enormous" amount of parsley? Eating more than normally found in foods hasn't been tested, but it isn't poisonous. Aside from potential allergy to parsley and diarrhea, not much else is likely to happen. If you have a bleeding disorder, it could prolong bleeding time. If you're pregnant, ingesting the seeds could cause uterine contractions.

We dont know: It is probably not harmful to eat parsley even quite a bit, but any diet that gets extreme can lead to metabolic consequence that are sometime unexpected. I agree with dr pappas that there is a remote possibility of metabolic consequence.But we just dont know what that might be. I would recommend consulting with your doctor and quantifying the amount you consume.
