Could you tell me if someone took an antihistamine before eating a food they're allergic to, would they be ok ?

No: If their reaction to that food is an anaphylactic reaction, it is not ok. If they have an oral allergy such as with fruits, yes it is ok, see an allergist to know the difference and help you manage your food reactions better.
