Hormone change: Usually when a person became excited or nervous, our body will secrete more Epinephrine and change hormone level to adapt the outside situation. As a result is less secretion of salivary fuild in the mouth and feeling the different taste and dryness in the mouth. Of course, some medical conditions, like diabetics, will amplifiy this dry mouth feeling.
