Had a knee x-ray and the machine seemed to be continuously noisy. worried that the tech took continuous pictures by accident. is that possible ?

Only one image: On a conventional x ray machine, to make an x ray beam electrons hit an "anode" in one spot. This heats it. To reduce the point of heat, the anode spins before, during and just after the exposure. This is likely what you heard. To take many conventional images one after another you need a different machine, usually a fluoroscope.
