Do you lose vision & hearing if all dorsal roots & what's equivalent in the trigeminal area get cut off? (losing ability to feel any pain basically)

No: Is this just a theoretical question? Loss of the input from the dorsal root ganglia wouldn't just eliminate pain sensation, it would eliminate all tactile sensation: Fine touch, vibration, kinesthetic sense, temperature, light touch, crude touch...not a situation that's compatible with any kind of functional life. Control of muscles requires sensory feedback.
