After a bout of the 'stomach flu', is it normal to feel bloated and gassy for several days? my stomach still doesn't feel 100%.

Gastroenteritis: It is not unusual to have lingering effects of gastroenteritis for several days following the acute bout. The general trend should be to continually improve, however. If your symptoms persist longer than 4-5 days or if you worsen again, you should see your doctor. Drink plenty of fluids in the meantime. Good luck.
