Could you tell me what are lean proteins and complex carbohydrates exactly?

Both?: Lean proteins have little fat. Fish, poultry-both skin less, lean red meat, lean pork-all qualify. Beans and lentils have carbs which are complex, have fiber, and much protein. Complex carbs are low glycemic and the body does not convert them to sugar quickly. Nuts, whole grains would qualify. There are others!
