I ate spinach ricotta tortelloni (pre prepared) but some bits i cooked weren't cooked on the outsides. will this lead to food poisoning/ oth problems?

Not really.: Pre-prepared foods are usually packed in such a way that they do not get contaminated. Even if you did not cook your tortellini property there almost no chance of food poisoning or even upset stomach.
