Good question: Obesity is caused by changes in a genetic mechanism in the brain and our taste mechanism is adapted to 6 input stimuli, sweet, sour, bitter, astringent, salt and metal, permutations and combinations of which give flavor from organic food. Taking sugar (and salt) by itself acts as a drug. Aspartame causes a phenomenon known as excitotoxicity that affects brain mechanisms to its detriment.
