What can cause very mild soreness days after sexual intercourse?

Possibilities can be: A minor vaginal infection such as yeast or bacterial vaginosis. Or mild trauma to the skin of the vagina. Or uterus got moved during intercourse and is a little sore. Most of the time this resolves on its own. If it doesn't you might want to get checked out.
