Kidneys: Inmost cases, there are no problems with other organs. But the organs you worry most about are the kidneys. Dehydration from food poisoning could cause kidney failure, which is why staying hydrated is so important. In addition, some types of e.Coli infection may damage kidneys directly (not through dehydration). The risk is increased when it is treated with antibiotics.
