Is it possible to be swallowing your own uvula, creating gag reflex? because this might be my case.

Yes: The gag reflex is caused by nerves that lay in the back of the oropharynx, in close proximity to the uvula. It is possible that an inflamed or enlarged uvula can cause a gag reflex.
