Allergen varies: Different species of fish have different allergy proteins (tuna vs. salmon etc.). You may react to one species but not others. Within the same species, processing meat can denature (unravel) proteins so that they are no longer recognized by the immune system and no longer cause allergy. This can be done by heat (cooking) or by the chemicals used in processing.
