Lymphoid tissue: Red patches on the back of the throat or "cobblestoning" is usually related to sinus post nasal drainage. Allergies, viral infections, bacterial infections are the usual etiologies, however cysts and neoplasia may cause bumps in the throat also. Persistent symptoms warrant a visit to your physician for an evaluation.
