Yes: In this case it is ok to stop. If you were treating an infection you would want to finish the entire course. Since you were negative it will be ok to stop.

Yes, this is ok: Doxycycline is a common treatment for chlaymida. If the true reason you were on Doxycycline was in lieu of a test result it is absolutely fine to stop after one day.
