Try no grains: For 2 weeks, try eating no wheat/gluten and see if your symptoms improve.  Then try to add back bread, see if your symptoms return.

Healthy diet: As a newly diagnosed type 2 diabetic, you should definatly change your diet.  Decreased consumption of all carbohydrates, esp. Simple ones like sugar and other sweets, is important.  Completely giving up carbs would be difficult, but shifting to more complex ones (like whole wheat bread instead of white) will help control your sugars.  A good reference on low glycemic index foods would help too.

Many things may cause hair loss including androgenic (male pattern) baldness, fungal infection, autoimmune disease like lupus, thyroid/pituitary dysfunction, iron-deficiency anemia... You should talk to your doctor again.

You need to talk to a physician.

Whole wheat: In general whole wheat pancakes are ok but if you smother them in butter and cream and other fats and carbohydates, the pendulum swings to bad for you.
