Sensitivity: We do not know why anyone develops an allergy to a known product.  It requires exposure and a sensitive immune system and that is presumably what happened to your body.  Unfortunately you will have to avoid products containing cashews and cashew products.

No cure, prevention: It is not clear how to prevent nut allergies at this time.  There are two camps, those that feel that avoidance of the food early in life is the key, and others who feel that regular ingestion of nuts early in life are the key.  Studies are underway to determine the answer, some data suggest that early ingestion may be the best prevention.  There is currently no cure, studies also being done.

Allergic antibodies: When a person becomes allergic to a food such as cashew, they begin making an allergic antibody (ige) that is specific to cashew.  On subsequent exposure to cashew the antibody binds to the cashew protein and triggers mast cells and basophils to release histamine, which can cause anything from nausea and abdominal cramping to itching and hives or anaphylaxis.

Skin rash and itching on the skin.The eyes , roof of mouth and throat may itch.Severe reactions include difficulty breathing, swelling to face  and throat.The most dangerous is anaphylaxis.This can be fatal

Cashew allergy: Cashew allergy is an immune (often ige mediated) allergic reaction in which consumption of the food leads to increased allergy cell activity (mast cells) leading to histamine release.  Symptoms can include hives, itching, swelling, abdominal pain, nausea, vomiting, diarrhea, and trouble breathing.  Some patients can also develop oral allergy syndrome characterized by tongue and mouth itching.

True allergy?: Are you truly allergic?  Are you having any allergy symptoms when you eat them?  Just because you see a positive result on skin or blood test, doesn't automatically mean that you are allergic to it (just like any other food). If you truly are, well then that just happened to be enough exposure for your immune system to react to it.

Repeat exposure: Allergic individuals are prone to developing an allergic immune system response to substances after they are exposed to them.  This may take only a few exposures, sometimes just one.  In other cases, you may not develop an allergy to a substance until after many exposures.  So you can develop an allergy to cashew at any time after you have eaten it, which will show up the next time you eat it.
