May be unrelated: I am not aware of any correlation between stopping smoking and excessive gas.  Have your eating habits changed since you quit?  Good for you for quitting, though.  It is the single most beneficial thing you can do to improve your health.

Yes: It all depends on how long you smoked and if you already have chronic bronchitis ( which is a form of copd) . To evaluate that you may need full pulmonary function test. Remember when you quit smoking, inflammation that the smoking triggered does not quit right away

Person dependent: I love helping people stop smoking! there is no single effective plan for everyone though. First we need to talk about your habits, what you've tried before, mood/ behavior tendencies, how much nicotine you use, etc. Etc. Most of the time a combination of techniques is best!

Work with your Docto: There are many ways to quit smoking from goig cold turkey to therapy to nicotine replacement and other drugs like zyban (bupropion) and chantix
most people who have smoked over long time and are serious about quiting the best way in my opinion is to work with your health care provider, who knows your history and can motivate you and recommend the best regimen which will work for you.It could be referal or rx.

Nothing dramatic: Alcohol increases the aging of the skin, and depending on how long you have smoked, how heavily, and how much damage has already occurred, you may find that your skin is smoother, more flexible and less wrinkled. Nicotine stains ultimately wear off after cessation.  But dramatic changes in appearance do not occur.

Because smoking: Smoking effects the taste buds and the food taste differently, and than when you quit the taste buds are returning to normal and for a while your taste of food may be lost or different
do not start smoking again and give some time for food to taste better
if it persists see your doctor or ENT speciaist.
