Knuckle Pads: Knuckle pads are benign, asymptomatic, well-circumscribed, smooth, firm, skin-colored papules, nodules, or plaques, located in the skin over the dorsal aspects of the metacarpophalangeal (mcp) and interphalangeal (ip) joints. A history of repetitive trauma related to sports or occupation is often present.

Contact dermatitis?: This could some form of contact dermatitis or hand eczema.  Fungal infections of the hand could also cause what you describe. You probably should see a dermatologist to help you clarify what may be going on.

Too much washing?: It sounds like you're washing too often or too vigorously. Over-washing removes natural skin oils. Try washing less frequently and/or more briefly; and try a moisturizing hand lotion.

: It's common in dark skin people. Contraceptive may worsen it but you are young so you are probably not taking. Home remedies for a trial: make a paste with baking soda, apply to the areas for 10 -15 minutes or apply lemon juice to the areas everyday.

None - Psoriasis?: It is unlikely that this has any relation to any vitamin deficiency. Vitamins= single molecules present in all kinds of foods. Deficiencies, in first world countries with lots of foods available/eaten, are relatively rare (exception vitamin D3 from cholesterol+UV light). Such  patterns are not rare; also possibly c/w psoriasis (very variable in presentation; a small possibility).

Dark knuckles: Many people get dark skin in areas where the skin has been irriated or inflamed. You may be irritating your hands at work or by exposure to some activity at home or some chemicals or irritants.  Try to protect your hands from irritation and from sun exposure, and buy hydrocortisone cream and use it twice a day, It may take months to lighten.
