Volunteers usually have to be screened and undergo some training once (and if) chosen.  It is a beautiful thing for a person to do and i strongly suggest you call the hospital and explore how their programs work.

Lot of intervention: If you are going into the hospital for an eating disorder, things must be very serious.  You can expect lots of blood test, nutritional and psychological intervention.  You may get IV fluids as well.  Only when they have stabilized your weight as well as lab work-- and when there is no danger of severe consequences (cardiac rhythm issues, even death), will discharge be likely. This is very serious.
