VITAMIN A: It is loaded with beta carotene which is source of vit a.And minerals, vitamin c, k, magnesium, phosphorus and choline.If you drink too much it may cause carrrotnemia, in which your skin turns to a yellowish color, it is not dangerous but causes discoloration of your skin
it is excellent for your liver, eyes, hair and skin if you drink in moderation.

Yes & no: Juices by themselves can provide some nutrients to a baby. But they are often heavy on the natural sugars & eliminate the pulp of the carrot/apple that would also benefit the child. I believe it is better for the child to get the whole fruit or vegetable in some form than the juice by itself. Though they are heavily advertised as being needed for a healthy diet, i consider them of little value.

Vitamins!: Carrots are rich in vitamin a especially. This is good for vision, especially night vision. Carrots have lots of other vitamins just not as high of concentrations as vitamin a.

None: Carrot juice is high in vitamin a primarily.  This is a fat soluble vitamin and is not absorbed through the skin. Nor will it be absorbed systemically to benefit your nutritional intake.  I advise drinking it.

Water intake: If all foods are constipating, the culprit is likely to be lack of water than what you eat. Drink enough water every day so that your urine is colorless, odorless and watery. If that does not help take a fiber laxative like Metamucil, with lots of water.

Malnutrition: Following very restrictive diets is not healthy in the long term.  Such diets can cause nutrient deficiency.  Always check with your personal physician before beginning any such diet plans.
