Chances are they won't care about how many stairs you climbed or calories burned, but what happens if you are morbidly obese, have elevated bmi posted on fitbit, but you don't state that when you apply for insurance.
Could that be used as evidence of a preexisting condition and get you dropped retroactively? Theoretically possible. I've heard of stranger things happening.
