Does 40mg vs 20mg omeprazole reduce more stomach acid or last longer? Does reducing too much stomach acid interfere with food digestion?

In brief: ACID REFLUX

40 mgs of Omeprazole will reduce acid production more efficiently than 20 mgs.
Acid reduction does not usually interfere with digestion of food.

In brief: Omeprazole

A higher dose will be more effective in reducing stomach acid, and may, depending on your therapeutic threshold, last longer. However higher doses = higher chance of side effects which can include gas, diarrhea or constipation.
Too high a dose and you lose the protective effects of stomach acid against bacteria, leading to a higher risk of c. Difficile and ppi pneumonia with long time use.
