In brief: Let try to help

The hamstring refers to any one of the three posterior thigh muscles, or to the tendons that make up the borders of the space behind the knee.
In modern anatomical contexts, however, they usually refer to the posterior thigh muscles, or the tendons of the semitendinosus, the semimembranosus and the biceps femoris. In quadrupeds, it refers to the single large tendon found behind the knee

In brief: Not easy

The hamstring does not respond to taping very well.
Taping a hamstring strain is not routinely done in the athletic world. Because of its length, depth and since most strains do not occur at the joint level, taping is not standard of care. A compression sleeve can be used to provide some support to the injured area. Allowing the injury to heal before returning to risky activity is the best plan.
