Both me and my partner have olive skin and dark hair. Brown eyes and his are greeny brown. What color hair will our baby have? Could it be ginger?

In brief: Probably dark, but

Any hair color genotype can be lurking behind the dominant dark phenotype - that's what we see.
So, if both parents have a hidden gene for ginger - or blond, and the egg & sperm that start the baby happen to have those recessive genes - it is possible. It would be much less likely for two blonds to have a dark haired child.
