What oil to use to cook foods that are cooked on high heat? (coconut oil vs canola oil etc. Etc.). Cook a lot of indian/ pakistani foods.

High heat cooking. For high heat cooking, coconut and palm fruit oils are great. Sesame oil can be used also. I wouldn't be heating canola oil -- it's bred to be high in omega 3's -- which can break down with high heat. You can use canola for other purposes though. Just make sure it's cold pressed and non genetically modified.
