Why do my hands and feet swell up randomly?

In brief: Not random

There is always a reason for swelling.
It seems random to you most likely because you have not discovered what is responsible yet. The usual suspects are diet, salt intake, positional, exercise related, arthritic, vascular disease, cardiac problems.....If you have ruled out the obvious ones then i would suggest seeing your primary care physician.
